LEFSE MAKING.  If you are interested, 2 recipes are at the bottom of this page.  For pictures of those making lefse click here! Or check our new page of recipes.

LEFSE

8 c riced Russet potatoes (16-20)
˝ cup heavy cream
˝ cup butter
1 T salt
4 c flour

Peel potatoes and cook. Drain. Rice potatoes (some do twice). Add butter, cream and salt.

LET STAND UNTIL COLD. VERY IMPORTANT!!!

Mix in flour and roll into balls about the size of a tennis ball or smaller. Keep balls of dough on a plate in fridge. Take out one at a time. Roll out paper thin on lightly floured board (some cover board with canvas).

Bake on stove top griddle at 500 degrees.

BARB PETERSON’S LEFSE RECIPE

8 c. riced potatoes (Ricing will make the potatoes absolutely smooth; lumps  cause sticking. Before ricing, let the drained potatoes set about 30 minutes to let the steam out, preferably in a shallow dish. Letting the steam go before ricing will reduce the moisture and also help prevent sticking. But more importantly, you will find you need less flour, which results in better flavor.)

Add to riced potatoes:

3/4 c. cream
3/4 c. butter
2 Tb. sugar
2 tsp. salt

Mix well and refrigerate overnight.

The next day, add 4 c. flour, work in well use your mixer to mix in flour (unless you have a commercial grade mixer, you will need to divide the dough into smaller amounts) Fform balls (about 1/3 c. ea). Roll out each ball on a pastry board using a sleeve covered rolling pin (to help prevent sticking and lessens the amount of flour required in the rolling out process). Lift with lefse stick and dry hot (about 400degrees) grill for about 1 minute on each side or until you see light brown spotting-- the lefse should NOT be crisp. Another tip-- use separate lefse sticks for lifting to the grill, and lifting off the grill, i.e. a cold stick, and a hot stick. This will help prevent putting holes in your beautifully rolled lefse because a hot stick will quickly soften your thinly rolled lefse making it easy to break a hole while working off the pastry
board. Keep lefse stacked under a kitchen towel while grilling the batch. A pizza wheel comes in handy to cut into wedges.
